It was my son’s summer science project to make blue yakisoba noodles using natural food coloring. We made it in the shape of Mt. Fuji 🗻

Mt. Fuji Yakisoba (Natural Blue Food Coloring with Red Cabbage)
Difficulty: Very Easy
Time: 15 min
Number of servings: 2
Ingredients:
2 packages Yakisoba noodles (steamed chuka noodles)
200g (7 oz.) red cabbage (natural blue food coloring)
200ml water
mayonnaise, for topping
Katsuobushi (bonito flakes), for topping
Directions:
1. Slice the red cabbage.
2. Place the cabbage in a frying pan and add water. Cover and steam until soft.
3. Remove the cabbage, leaving the purple cooking liquid in the pan. Add the Yakisoba noodles and cook until they turn BLUE!
4. Season with chicken soup stock powder or any seasonings of your choice. Be careful not to add anything acidic, or the blue color will fade. I added pork and the noodles lost some of their blue color, so I recommend cooking the meat and vegetables separately.
5. Heap up blue Yakisoba onto a plate, top with mayonnaise, and garnish with Katsuobushi (bonito flakes).
6. Serve the cooked red cabbage with your favorite dressing.
💡 Fun Science Tip:
If you squeeze lemon juice over the Yakisoba, the noodles will turn pink! 🍋💖
