Japanese Potato Salad with Soft Boiled Eggs (Recipe)

Number of servings: 2~3


Ingredients:

2 cold eggs right out of the fridge

300g (10.5oz.) potatoes

3 tbsp. mayonnaise

salt and pepper


Directions:

1. To make soft-boiled eggs, cook the eggs in boiling water for 7 minutes, place them in water to cool, then peel.

2. Peel and cut potatoes into chunks. Place them in a microwavable container, cover, and microwave for 6 minutes.

3. Add eggs, mayonnaise, salt and pepper, then mash with fork, leaving small chunks for texture
